Over the course of several years, Giolito has collected tools and objects used throughout the Cuneesi valleys for the making of cheese and has attempted to recreate the art in a reproduction of a small step by step “Cheesemaking” exhibition of the average producer.
Bra Ciuk
A new cheese, a perfect solidarity between the enological world and that of cheese. It is a Bra Tenero (2 months) aged in barrique vats of crushed grapes of the nobile Langhe wines (Barbera, Pelaverga, Nebbiolo) . After approximately 3 months, of constant care and attention, it is ready to inebriate the palate with its unique taste.
