In Bra, the city of origin for the Association Slow Food and the elegant hostess of “Cheese”, the largest international cheese manifestation, the family Giolito is synonymous with Formaggio, or cheese.
From the turn of the 20th century the family has energetically dedicated itself to locating, aging and commercialization of the best cheese produced regionally and nationally.
It began with the grandmother, “la Nonna”, instigator of the family’s mobilization and wholesale resale in the Province’s of Cuneo and Genova. Following the second WW, her son Francesco, recommenced with the wholesaling, targeting this time the various and culturally important weekly markets throughout the province of Cuneo.
Today, three generations strong in cheese, Fiorenzo, an extrovert by nature, continues the long family tradition, dedicating his time to locate the finest examples of cheese produced in Piemonte and Italy and then using his expertise in order to age them to perfection. With the small producers, Fiorenzo searches to create a rapport of trust and collaboration, but above all to respect their vital role in a disappearing art and tradition of farmer, shepard and artist.
